Red and white wine vinegar cover the basics, and balsamic vinegar of Modena shows up plain, as a glaze, and in an apple balsamic version for something a bit different. Apple cider vinegar comes in a regular and an organic bottling.

This is the kind of shelf that barely changes week to week, since a good vinegar keeps and nobody needs it delivered same day.
